Beets have an edible root and edible leaves. In the past, the leaves were harvested for consumption. Now, it is usually the root, or bulb that is harvested and eaten. The bulbous root of a beet has 10-12 inch leafy stems. Beets are usually very sweet and have the highest sugar content of all vegetables.
Beets, especially when juiced, are known to increase stamina and lower blood pressure. The leaves of beets have immune strengthening properties and are good for the bones.
Temperature:38-42 degrees is the best storage temperature range for beets.
