The Cuban pepper or ‘cubanelle’ pepper is about 5 inches long and takes about 65 days to mature as a plant. Cubanelle means ‘little Cuba’ but these peppers originated in Italy. Colors of these peppers can vary from yellow-green to red. Bright red coloring indicates that the pepper is fully ripe. The pepper’s skin is thin and has a somewhat wrinkled appearance.
Cubanelle peppers are considered sweet and are versatile for cooking. Cubanelles are actually a better source of vitamin C than most citrus fruits! The vitamin C content in them promotes wound healing and iron absorption. In addition, they contain bioflavonoids, which may block the onset of tumors, and are thought to protect eyesight.
