Parsley root is shaped like a slender carrot. It is light beige and has an herbal taste. It can be served raw or cooked and has a taste reminiscent of celery, carrots, turnips, and parsley. Small to medium sized parsley roots are the tastiest.
Parsley root has similar health benefits to plain and curly parsley. Like anise, parsley root contains histidine, which inhibits tumors. Parsley root can reduce allergies and contains effective antioxidants.
