Seared Scallops with Citrus Supreme Salsa

Ingredients

1/2 lb. Fresh wild caught scallops

1 large Consalo Family Farms orange, cut into supremes

1 large Consalo Family Farms grapefruit, cut into supremes

2 Consalo Family Farms mandarins cut into supremes

1 Consalo Family Farms lemon, juice

1/2 small red onion thinly sliced

2 tablespoons Extra Virgin Olive Oil

Sliced green olives

Fresh Consalo Family Farms cilantro leaves

2 tablespoons unsalted butter

Salt and freshly ground pepper to taste

Instructions

  1. In a large bowl, combine the citrus supreme, cilantro, sliced red onion, sliced olives, Extra Virgin Olive Oil, lemon juice and season with salt and pepper. Mix well and set a side.

  2. Heat a non-stick skillet over medium high heat.

  3. Pat dry the scallops with paper towel, season with salt, pepper and a drizzle with olive oil; sear for about 2 minutes or until golden brown, then turn and sear for another 2 minutes. Add the butter and start spooning over the scallops until cooked about 1 minute.

  4. Remove from heat and top with fresh citrus salsa.

  5. Garnish with mixed salad.
