Classic Tabbouleh

Ingredients  

2 bunches Consalo Family Farms Parsley, chopped

4 sprigs Consalo Family Farms mint, chopped

1 cup bulgur wheat

1 small Consalo Family Farms lemon, juice

5 cherry tomatoes, halved

1 small red onion, finely diced

Extra Virgin Olive Oil

1/2 lemon, zest

Sea salt and freshly ground pepper to taste

Instructions

  1. In a large bowl, soak the bulgur wheat with boiling water then cover with plastic wrap and leave for about 30 minutes.

  2. Fork through the bulgur wheat to separate the grains then add the chopped herbs, tomatoes and the diced onions.

  3. Mix to combine and grate in the lemon zest and add the lemon juice.

  4. Season with salt and pepper and a drizzle of Extra Virgin olive oil.
