Roasted Beets Tahini Dip

Ingredients

2 medium Consalo Family Farms beets

1 clove of garlic

2 tablespoons tahini

1/2 Consalo Family Farms Lemon, juice

1/4 teaspoon ground cumin

Kosher salt

Salt and freshly ground pepper to taste

Instructions

  1. Preheat oven to 400 F.

  2. Pour the salt at least 1/2 inch up the sides of a small baking tray.

  3. Wrap the beets in foil with a drizzle of olive oil, pinch of salt and pepper, then place on the baking tray.

  4. Add roasted beets, garlic, tahini, lemon juice and cumin to a blender and blend until smooth.

  5. Add all the ingredients to the blender and blend until smooth.

  6. Adjust seasoning and serve topped with diced roasted beets, greek yogurt and a drizzle of Extra Virgin Olive Oil.

Tip – Tahini Beet Dip is a great addition to any charcuterie board
