Rustic Blueberry Tart with Mandarin Zest
Ingredients:
1 pint Consalo Family Farms blueberries, washed
¼ cup granulated sugar + 1 tbsp for topping
½ tsp cinnamon
1 ½ tsp fresh mandarin juice
2 tbsp cornstarch
1 egg
1 pie crust, store bought
Little Smoochies ® Mandarins, zested
Instructions:
- Preheat your oven to 350°F and prepare a baking sheet with parchment paper. 
- In a large mixing bowl combine blueberries, sugar, cinnamon, lemon juice, and cornstarch and mix until the blueberries are well coated. 
- Place pie crust on the baking sheet and add blueberries in the center of the crust leaving about 2-3 inches around the sides. 
- Fold the crust over the berries all the way around, leaving blueberries exposed in the center. 
- Whisk one egg in a small bowl and using a pastry brush, brush the top of the pie crust. 
- Sprinkle the crust with 1 tbsp of sugar. 
- Bake for 15 minutes or until the crust is golden brown. 
- Sprinkle mandarin zest over blueberries.
